The research group of Dr. Pérez Jiménez has focused on the study of the postprandiales effects of fats, which are the nutrients which have obvious immediate effects on the State of health. They have thus shown that the lipids (fats) eaten first thing in the morning have an impact on the State of oxidation and inflammation of our arteries throughout the day, so a measurement in fasting can give artificial results. Studies have also shown that nutrients have also a modulating function in metabolism by means of which may even enable or disable genes in the postprandial State.
Pérez Jiménez has done research that shows for example, as the same amount of fat eaten for breakfast, produces different reactions of inflammation and blood oxidation during the day very different if that fat were butter or olive oil.
